Pork Riblets

Small pieces of pork ribs, usually trimmed from the spare ribs or baby back ribs when the rack is being shaped.

Characteristics:

  • Typically the short, flat, meaty sections of bone and cartilage that don’t fit into full rib racks.

  • Considered a byproduct cut but prized for flavor.
