Beef Wagyu Striploin

Just like regular striploin, it comes from the short loin primal (along the back between the rib and sirloin).

Characteristics:

  • From Wagyu cattle, genetically predisposed to intense intramuscular marbling.
  • The striploin retains its long, boneless shape but with much denser marbling compared to standard beef.
  • The fat is finer and lower-melting, giving it a buttery texture.
