Beef Wagyu Ribeye

Same as a regular ribeye — from the rib primal (ribs 6–12) along the upper ribcage.

Characteristics:

  • Comes from Wagyu cattle, genetically predisposed to extraordinary intramuscular fat (marbling).

  • The spinalis dorsi (ribeye cap) is especially prized in Wagyu because the fine marbling makes it melt-in-your-mouth tender.

  • Appears almost white with streaks of marbling, compared to conventional ribeye.
