Beef Top Blade
The top blade comes from the chuck primal (shoulder section of the cow). Specifically, it’s taken from the top of the shoulder blade.
Characteristics:

Well-marbled, flavorful, but contains a tough strip of connective tissue running through the center.

When that connective tissue is removed, the cut becomes the flat iron steak, one of the most tender cuts from the chuck.

Affordable compared to ribeye or striploin, but still prized for its tenderness once properly prepared.
