Beef Top Blade

The top blade comes from the chuck primal (shoulder section of the cow). Specifically, it’s taken from the top of the shoulder blade.

Characteristics:

  • Well-marbled, flavorful, but contains a tough strip of connective tissue running through the center.

  • When that connective tissue is removed, the cut becomes the flat iron steak, one of the most tender cuts from the chuck.

  • Affordable compared to ribeye or striploin, but still prized for its tenderness once properly prepared.
