Found in the lower leg of the cow, specifically the Achilles tendon that connects the calf muscles to the heel bone.

Characteristics:

  • Very tough and inedible when raw; requires long, slow cooking to break down.

  • Typically sold as thick, whitish strips of sinewy tissue.
