Beef Short Plate

The short plate is a primal cut of beef taken from the underside of the cow, specifically the belly area just below the rib and in front of the flank.

Characteristics:

  • Relatively fatty, with good marbling.
  • Contains connective tissue and cartilage.
  • Known for being tough if not cooked properly, but very flavorful due to fat content.
