Beef Shin

From the lower leg of the cow, either front (foreshank) or rear (hindshank).

Characteristics:

  • It’s a hard-working muscle, full of connective tissue and sinew, which makes it naturally tough.

  • Often cut crosswise into thick slices, exposing the marrow bone in the center (the famous osso buco cut).

  • Very lean compared to other cuts, but rich in collagen.
